Wonderful stir-fried veggie, chicken pasta salad that's great served warm or cold. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Place in large bowl with chicken. In large skillet or wok, heat 1 tablespoon oil. Remove carrots, place in bowl with chicken and pasta.
